These premium Belgian callets are made using 36.6% cocoa butter and a dash of vanilla that rounds off the taste with a slight hint of sweetness. This premium semi-sweet chocolate from Callebaut requires tempering to obtain a high gloss for chocolate making. Callebaut's 811 formula is a general-purpose chocolate that is excellent for all your recipes that call for semi-sweet chocolate or bittersweet chocolate. Its rich and intense cocoa flavor and moderate viscosity makes it perfect for medium (rather than thin) shell moulding and dipping.
